A food-led group near London Bridge is seeking a Sous Chef to join its kitchen.The restaurant cooks over charcoal and open fire, with a menu of traditional, stripped back and inventive sharing dishes and small plates.This is a hands-on role in a 70-cover restaurant doing up to 250 covers a day, working alongside a brigade of 8 to 10 chefs.This role would suit a Sous Chef with charcoal and open fire experience who is ready to step up into a quality-focused, ambitious operation.
The Role
- Hands-on cooking with the team across all sections.
- Support the Head Chef with training and menu development.
- Work closely with the owner and directors on new dishes.
- Maintain high standards of food quality, presentation and consistency.
- Support recruitment and training of BOH staff.
- Work to budgets, GP and P&L targets.
- Uphold food safety and hygiene standards.
