Role Overview-

We are seeking a Hospitality Stock Controller responsible for managing liquor stock within hospitality areas. The role includes overseeing the cellar, bars, and BOH operations for daily conferences and events, as well as stock ordering, control, stock takes, and rotation.

Key Responsibilities-

  1. Operations:
  2. Protect profit by organizing and managing stock effectively.
  3. Ensure cleanliness and maintenance of all bars, cellar, and BOH areas.
  4. Manage deliveries and address stock shortfalls.
  5. Lead the cellar team for event setup and operations.
  6. Train and brief event bar managers and staff.
  7. Order stock for all events.
  8. Maintain product quality, including cleaning beer lines and bar displays.
  9. Hold weekly meetings with the sales team for conferences and events.
  10. Assign weekly tasks and manage bar setups for events.
  11. Operate and manage bars during exclusive events.

Financial-

  1. Manage liquor GP% through accurate stock takes.
  2. Minimize stock wastage and out-of-date products.
  3. Record and monitor all stock movements, deliveries, consumption, and wastage, using data to forecast and order demand.
  4. Maintain records of pricing, purchasing, and discrepancies with suppliers.
  5. Monitor and record stock transfers between departments.

People Management-

  1. Build and train a core casual team with development opportunities.
  2. Ensure team members are knowledgeable about products and trained in cellar and BOH operations.
  3. Maintain a can-do attitude and motivate staff.

Health & Safety-

  1. Comply with health, safety, and food safety standards.
  2. Perform audit checks and ensure completion of HSE paperwork.
  3. Record and report accidents, incidents, and near misses.
  4. Ensure food handlers understand and sign off on food safety briefings.

Licensing-

  • Ensure staff are briefed on licensing requirements and trained accordingly.

Other-

  • Adhere to media and social media policies.
  • Perform additional tasks as directed by senior management.

Person Specifications-

  • Experience in stock management/control.
  • Cellar training is desirable.
  • Strong interpersonal skills.
  • Basic Food H&S and COSHH training are desirable.
  • Personal license and forklift license are desirable.
  • High IT proficiency.
  • Excellent communication and motivational skills.
  • Ability to work under pressure, independently, and as part of a team.
  • Customer service, planning, organizing, and delegation skills.
