Created for Levy UK & Ireland's food and beverage operation at The Conduit, ACRE brings these experiences together under one hospitality identity, with chef partner Will Devlin shaping the food direction. We are building a team around great food and warm, generous hospitality. Our approach begins with food, farming and hospitality. We work closely with farmers, growers, fishermen and producers, celebrating ingredients that are grown, reared and sourced with care. We believe in seasonality, sustainability and doing things the right way. Across ACRE, you will also gain experience through our restaurants, bars, events and member spaces. Your Place in ACRE Nettle is a recently opened rooftop restaurant guided by the British landscape and the seasons. Its menu celebrates carefully sourced produce through thoughtful cooking, matched by service that is knowledgeable, relaxed and personal. As Floor Manager at Nettle, you will lead each service from the floor, setting the pace, directing the team and keeping communication clear between the restaurant, kitchen, bar and Guest Relations Manager. You will remain visible and hands-on throughout the shift, anticipate pressure points and make confident decisions so the guest experience feels warm, personal and well organised. Nettle will be your primary home within the wider ACRE team.

  • Lead the floor throughout service, deploy the team against reservations and trading demand, set clear priorities and adjust the plan as conditions change, while remaining visible to guests and colleagues.
  • Lead concise pre-service briefings that confirm reservations, member and guest preferences, dietary and allergen requirements, menu changes, sales priorities, team deployment and the plan for the shift.

  • Build relationships with members and guests, recognise preferences and respond thoughtfully to feedback. Resolve concerns promptly within your authority, record relevant details and elevate serious or recurring issues to senior management.

  • Support labour deployment in line with the trading plan, monitor the availability and use of linen, glassware and crockery, and ensure bills, cash handling and end-of-day procedures are accurate and completed on time.
  • Lead consistent compliance with food hygiene, allergen, health and safety and licensing procedures. Complete required checks, maintain clean and safe service areas, and ensure bills, cash handling and end-of-day procedures are accurate and completed on time.
  • Use POS, reservation and scheduling systems accurately to monitor service, communicate clear shift handovers and turn guest feedback and operating issues into practical follow-up actions.
  • Build a positive, inclusive team culture and work collaboratively across ACRE's restaurants, bars, events and member spaces when appropriate and agreed.
