As the Culinary Lead at this multi-site facility, you’ll be the driving force of the team encouraging the team to deliver great things through leading and monitoring daily activity. You’ll be overseeing the daily needs of this culinary team and working with other leaders across the business!
You will be working with an amazing team of culinary staff that are vibrant and outgoing and are welcoming to guidance and instruction. We are looking for an Executive Chef to join our team and continue the success in our business.
Key Responsibilities:- Ensure all food and hospitality services are catered to the highest of standards and in line with the contract specification, manage the service within the budget and financial targets.
- Recruit, lead, develop, motivate and manage the team to deliver superior food and service.
- Support the Kitchen lead with implementing menu changes.
- Using your leadership skills to create a thriving and successful working environment.
- Develop and maintain positive client relationships to ensure we are true partners in their business.
- Manage all aspects of health & safety and food safety.
- Oversee all HACCP, food safety, and health & safety compliance.
- Manage food wastage and commitments to Net Zero commitments.
- Managing and training any Demi-chef De Parties or Commis working with you.
- Ensuring a retention and succession plan for all levels of the culinary department.
- Confident to implement new procedural changes in the culinary department and ensure your team are compliant.
- Helping the Sous Chef and Head Chef to develop and cost menus.
- Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety.
- Monitoring portion and waste control to maintain profit margins.
- Manage food cost, labour budgets, portion control, and waste to hit key financial targets.
- Working closely with the General manager on site to ensure front of house and back of house are working seamlessly together.
- Elevate the food offering and support food-led events and activations.
- Assisting the management team with gastronomy activations and food led events.
- Reporting to the head of operations and working closely to ensure we are head of culinary innovation in Ireland.
- 4+ years’ experience in a multi-unit or high-volume culinary role.
- Strong senior leadership experience with exceptional people management skills.
- Managed senior-level third party relationships.
- Excellent management skills.
- Communication skills - written & oral communication.
- A passion for food and customer service.
- Led the implementation of change programmes to deliver operational benefits.
- Experience of working within brand guidelines to deliver results.
- Passionate about working in a food service environment.
- Able to work positively with others as part of a team.
- Food Hygiene Certificate.
