Join Birchwood at The Conduit as Head Bartender and be part of an exciting chef‑led opening from Will Devlin in the heart of Covent Garden. This will be the second Birchwood restaurant, and third restaurant with Will at the helm. It is a beautifully considered restaurant offering all day dining, with breakfasts and grab and go during the day, moving into small plates and sharing platters in the evening.

Responsibilities

This is an opportunity for a passionate and skilled hospitality professional to lead the full beverage operation within a quality‑led restaurant focused on seasonality, sustainability and thoughtful service. As Head Bartender, you will take ownership of the bar during service, lead and develop the Bartender and Barista teams, and help shape a beverage programme built around creativity, low‑waste principles and exceptional guest experience. Alongside strong cocktail and wine knowledge, this role also oversees the coffee and barista operation, ensuring consistently high standards in coffee preparation, equipment maintenance and service delivery across the wider beverage offering.

Qualifications

We are looking for candidates with experience as a Senior Bartender or Head Bartender within a premium hospitality environment, with strong knowledge of cocktails, spirits and beverage service. Experience supporting or overseeing coffee service, alongside an interest in seasonal ingredients, low‑intervention wines and low‑waste bartending approaches, would be highly beneficial. You should be a confident, hands‑on leader who enjoys developing people, building guest relationships and leading busy services with calm professionalism and attention to detail.
