The Island Quarter is an ambitious and exciting real estate development of a 36 acre freehold site in the heart of Nottingham, a development that has been ongoing since 2016 when the land was acquired. We are a new and dynamic hospitality team charged with creating 1 The Island Quarter to be a sustainable business, transforming it into a cultural hub, a new and exciting destination for experiencing food, arts, music, sporting events and other community interests. The first phase consists of 2 restaurants – Binks Yard and Cleaver & Wake, an outside live events space with a bandstand and an internal venue for private functions, a rooftop terrace as well as a florist. What we do at 1 The Island Quarter is much more than be just a venue. Our guest-centric team love what they do, taking pride in always delivering value and consistency, they are actively generous in going the extra mile to create great memories for our guests, aiming to deliver genuine, exceptional service that is inclusive, authentic and fun.

The vision of our Chef Patron Laurence Henry, the menu allows you to be taken on a food journey, cooked in our open kitchen by our very skilled and passionate chefs. Our knowledgeable bar team will pair drinks that heighten your experience and our front of house team know no bounds on ensuring that you are taken care of. Cleaver & Wake is a place where memories are made.

As a Cleaver & Wake Pastry Chef, you will be creating and decorating pastries and other desserts, working to the standards set out by the Chef Patron, developing your skills and honing your speciality. You will need an interest in working in a fast paced kitchen, as well as delivering exceptional dishes – fine dining and precision cooking, as well as an eye for detail, you thrive in an environment where each dish is a creation.

Managing food margins through wastage and portioning is second nature to you, whilst developing a high performing team is something you have done in previous roles and will bring to this one. All chefs in your section will have a development plan and you will nurture that talent to become your successor.

Having working in kitchen before, you will understand the importance of food safety, including labelling, HACCP and allergies – a 5* food hygiene rating is your bread and butter and you ensure your section is audit ready at all times, putting your guests as your priority.
