We are seeking a reliable and experienced Sous Chef to provide temporary sick cover at The Old Swan Hotel, Harrogate. This is a hands-on role, supporting the kitchen team to maintain high culinary standards and deliver exceptional dining experiences across our outlets while the permanent Sous Chef is absent. The successful candidate will be professional, organised, and able to step into a busy kitchen with minimal notice.
Duties
- Support the Head Chef in the preparation and delivery of all food outlets, including breakfast, lunch, dinner and any events or banqueting as required.
- Supervise and coordinate kitchen team members during shifts to ensure efficient service and consistent dish quality.
- Prepare, cook and finish dishes to the standards and presentation required by the hotel menus.
- Ensure food is stored, handled and prepared in accordance with food safety and hygiene regulations (including HACCP procedures).
- Assist with stock control, ordering and receiving deliveries when required, minimising waste and maintaining cost control.
- Maintain kitchen cleanliness and ensure equipment is used and stored safely.
- Provide cover for the Head Chef in their absence where appropriate, including supervising service and managing kitchen rotas for the shift.
- Support training and development of commis chefs and kitchen staff, offering guidance and constructive feedback.
- Communicate effectively with front of house to ensure smooth service and excellent guest experience.
Qualifications
- Proven experience as a Sous Chef or Senior Chef in a similar hotel or high-volume kitchen environment.
- Strong knowledge of food safety and hygiene standards; Level 2 or higher food hygiene certificate preferred.
- Excellent culinary skills with a good understanding of menu development, portion control and consistency.
- Ability to work under pressure, prioritise tasks and adapt to changing requirements at short notice.
- Good leadership and communication skills, with a collaborative and supportive approach to team working.
- Flexible approach to working hours, including evenings, weekends and bank holidays as required.
- Right to work in the UK.
Contract and Pay
- Employment Type: Temporary (sick cover)
- Expected hours: Full-time hours to cover the required shifts; rota will include weekends and evenings.
- Pay: Competitive rate dependent on experience and qualification, up to £35k a Year.
