Key Responsibilities:
- Lead all pastry and bakery production across the restaurant, events, and catering services, ensuring consistency and excellence in every dish.
- Design and develop innovative, seasonal dessert and pastry menus that align with CLAP London's concept and standards.
- Oversee daily kitchen operations within the pastry section, maintaining smooth service and efficient workflow.
- Manage, train, and develop the pastry team, including scheduling, performance management, and ongoing skills development.
- Maintain exceptional standards of food quality, presentation, and attention to detail.
- Monitor and control inventory, ordering, and food costs to meet financial targets.
- Work closely with the Head Chef and senior management to contribute to overall menu strategy and business growth.
- Ensure full compliance with food safety, hygiene, and health and safety regulations.
- Oversee preparation and execution for special events, private dining, and external catering.
Requirements:
- Proven experience as a Head Pastry Chef or Senior Pastry Chef in a high-end or high-volume environment.
- Strong leadership and team management skills.
