As a core member of the farm shop's fishmonger team, you will act as the resident seafood expert. You will manage the day-to-day operations of the fish counter, ensuring the highest standards of quality, freshness, and sustainability from catch to customer.

Key Responsibilities

  • Product Preparation & Production: Hand-prepare fish and shellfish (scaling, gutting, filleting, skinning, pinning, and shucking) according to company and customer specifications. Package, weigh, label, and price products accurately for retail display. Prepare oven-ready fish dishes, marinades, and seafood accompaniments.
  • Customer Service & Sales: Greet customers enthusiastically, guiding them through the daily catch and offering expert culinary and storage advice. Inspire customers with recipe ideas, cooking times, and preparation tips to encourage link-selling. Process transactions swiftly and accurately using the shops EPOS system. Fulfill custom and wholesale orders for both retail shoppers and local catering clients.
  • Stock Management & Quality Control: Ensure all paperwork is completed by EOB day daily. Daily end of shift counter stock count to be done, weekly fridge and freezer stock count to be done. Receive, inspect, and sign for incoming fish deliveries, verifying product quality, temperature, and quantity. Implement strict stock rotation and manage inventory to minimize waste and maximize margin. Monitor and record daily temperatures of display counters, walk-in fridges, and freezers in accordance with food hygiene legislation.
  • Hygiene, Health & Safety: Maintain a pristine, sanitized work area and counter display, strictly following HACCP and UK food safety regulations. Handle all tools, equipment, and chemicals (like descalers and sanitizers) safely. Maintain exceptionally high personal hygiene standards.

Requirements & Qualifications

  • Experience: Proven background working as a fishmonger or in a professional seafood preparation role.
  • Skills: Excellent knife skills with a deep understanding of different fish species, seasonality, and fat contents.
  • Soft skills: Punctual, reliable, excellent personal hygiene, fluent or native English speaker and possessing excellent interpersonal skills to handle customer queries.
  • Customer Skills: A warm, engaging personality with a true passion for food and a desire to educate customers.
  • Physical & Environmental: Physical stamina to stand for extended periods, lift heavy boxes, and work comfortably in cold, wet environments.
  • License: A valid driver's license is required (must be able to drive in the UK, may need to do early morning pick up from the market if needed, waste management).

Package: Paid overtime where applicable. Shift pattern, Tuesday- Sunday, Monday- Friday, Wednesday- Monday Daytime hours 28 days annual holidays (including bank holidays).
