We are looking for an experienced and inspiring Head Chef to lead our kitchen at The Devil’s Advocate.

Known for bold seasonal Scottish dishes, an exceptional whisky collection, inventive drinks and warm hospitality, The Devil’s Advocate is a venue full of character, flavour and attention to detail.

The Role

As Head Chef, you will take ownership of all kitchen operations.

Leading a talented brigade to deliver consistently excellent food, you will shape menus around fresh, seasonal produce, maintain high standards across every service, take control of all aspects of kitchen management and work closely with the venue management team to keep things moving forward.

Key Responsibilities

  • Lead, motivate and develop the kitchen team, creating a positive and professional working culture.
  • Design and deliver menus that celebrate seasonal Scottish produce and suit the character of The Devil’s Advocate.
  • Ensure every dish leaves the kitchen to the highest standard of flavour, presentation and consistency.
  • Manage food ordering, stock control, wastage, GP targets and kitchen costs effectively.
  • Maintain excellent standards of food hygiene, health and safety, cleanliness and compliance.
  • Plan prep, rotas and service flow to support a busy, high-quality restaurant environment.
  • Work collaboratively with front of house and senior management to deliver memorable guest experiences.
  • Working with procurement and stock management platforms
  • Experience in working with Food Safety Management Systems
  • Delivering to budget targets and key KPIs
  • Responsible for the recruitment and onboarding of new team members along with developing the existing team
  • Follow and be aware of culinary trends to support the development of the menu cycles throughout the year

About You

  • Proven experience as a Head Chef, Senior Sous Chef or similar leadership role in a fresh-food kitchen.
  • A genuine passion for quality ingredients, seasonal cooking and creative menu development.
  • Strong leadership skills, with the ability to train, support and get the best from a team.
  • Commercial awareness, including stock management, labour planning and cost control.
  • Calm, organised and focused under pressure, especially during busy services.
  • A sharp eye for detail and a commitment to maintaining consistently high standards.
  • A positive, hands‑on attitude and pride in creating food that guests remember.
