We are recruiting an experienced Chopper Specialist (Prep CDP) who understands the vital importance of the cleaver station in high end Cantonese cuisine.
The Role
You will be the engine of the kitchen. Operating at the CDP level, you will be responsible for the accuracy, speed, and portion control of all raw ingredients before they hit the wok line.
Key Responsibilities:
- Take full ownership of the seafood preparation station, cleanly processing fish, squid, prawns and specialized seafood.
- Execute precise cutting techniques (slicing, dicing, and mincing) using a Chinese chopper, ensuring strict consistency in size and thickness for even cooking.
- Organise, rotate, and manage daily raw mise en place to minimize food waste and optimize food costs.
- Maintain a pristine, sanitized, and perfectly organized station according to London food safety regulations.
- Collaborate dynamically with the Wok chef to ensure a smooth, synchronized service flow.
What We Are Looking For:
- Outstanding knife handling skills—experience with a traditional Chinese chopper/cleaver is highly preferred.
- Prior experience running a prep or production section in a high-volume restaurant kitchen.
- Strong working knowledge of seafood butchery and protein portioning.
- Fluency or spoken command of Cantonese is highly desirable alongside functional English.
