The Role

We are seeking a talented and motivated Pastry Sous Chef to join our kitchen team. The ideal candidate will have a strong background in French pastry, a refined sense of aesthetics, and the ability to lead and inspire a small team. You will assist the Head Pastry Chef in daily production, ensuring that every pastry leaving the kitchen meets the highest standards of taste and presentation.

Key Responsibilities

  • Support the Head Pastry Chef in all aspects of pastry production and kitchen operations.
  • Supervise and train junior pastry chefs and commis.
  • Prepare and finish a wide range of French pastries, including viennoiseries, choux, entremets, and seasonal creations.
  • Ensure consistency and quality across all products.
  • Assist in menu development and testing of new recipes.
  • Maintain hygiene, cleanliness, and food safety standards in compliance with HACCP and UK regulations.
  • Monitor stock levels and assist with ordering and inventory management.
  • Contribute to a positive, collaborative, and professional kitchen environment.

Requirements

  • Minimum 3 years experience in a professional pastry kitchen, ideally within a French patisserie or fine dining environment.
  • Strong technical skills in classic French pastry techniques.
  • Creative flair and meticulous attention to detail.
  • Excellent organisation and leadership abilities.
  • Ability to work under pressure and manage multiple tasks efficiently.
  • Strong communication skills and a collaborative attitude.
  • Valid right to work in the UK.
  • Must be available to cover all operational shifts spanning between 4am to 7pm.
