Join the pastry team at Nobu Hotel London Portman Square as our Pastry Chef de Partie. In this role, you’ll take ownership of your section, producing beautifully executed pastry dishes that reflect Nobu’s refined style and global reputation. You’ll work closely with the Pastry Head Chef and wider kitchen team, showcasing precision, consistency and a passion for outstanding flavour.

You will:

  • Prepare, bake and present all pastry dishes to the highest Nobu standards, ensuring impeccable quality and consistency.
  • Run your station efficiently, ensuring it is fully set, organised and ready for service.
  • Follow Nobu recipes precisely and maintain correct portioning and production levels.
  • Uphold strict hygiene, allergen and food safety practices at all times.
  • Receive, store and rotate pastry items with care and attention.
  • Monitor and maintain equipment, reporting any faults promptly.
  • Support the creation of tasting menus, Omakase dishes and special pastry items.
  • Maintain detailed knowledge of all pastry menus and communicate effectively with front-of-house.
  • Collaborate closely with colleagues and support other kitchen areas when needed.
  • Provide warm, attentive and genuine service in every guest interaction.
  • Demonstrate personal presentation standards that reflect the Nobu brand.
  • Suggest improvements that enhance efficiency, accuracy and guest satisfaction.
  • Work proactively, positively and in alignment with Nobu values of Family, Crafted, Smile and Kokoro.
