We are very pleased to be working alongside a beautiful family run hotel on the outskirts of Skipton who are looking to recruit for an Executive Head Chef to join this award-winning hotel. The establishment is a quality, fresh food hotel set within a beautiful countryside area utilizing locally grown produce serving traditional dishes to a high standard.
A typical day would see the kitchen brigade catering a busy service which spans over breakfast, lunch, afternoon tea, fine dining in the 110-cover restaurant, and they also have a strong conference and banqueting element to this establishment. There is a large brigade in the team with the plan to take on an additional two roles due to a surge in trade. The kitchen is well equipped with quality industrial equipment and plenty of space to conduct daily preparation and service.
With a strong emphasis on locally produced ingredients, the long-standing head chef produces seasonally inspired menus using traditional cooking techniques. The average working week is around 48 hours for a salary of £35,000 per annum plus a bonus profit scheme. The working week is 5 days over 7 working straight shifts with the very occasionally split depending on business.
Candidate Role- Assist the Chef director with the day to day running of the kitchen
- Be hands on, in both prep and service
- Ensure consistent quality in all products
- Work with the senior management team to drive the business forward
- Train, develop and mentor the junior members of the team
- Write new seasonal menus, dishes, costings and specs
- Ensure financial targets are met
- Adopt and maintain the kitchens’ food safety and hygiene protocols
- Proven track record at senior level for the past 2 years
- Have excellent man management, time keeping and personal skills
- Be confident in all areas of the kitchen
- Ideally from a hotel background
- Be professional and approachable
- Ideally have some conference and banquet experience
- Must be driven, focused and ambitious
