An exciting Brasserie Sous Chef position is available at a luxury country hotel which has a great reputation for offering its guests high quality dining. In this role of Sous Chef, you assist in the running of the award winning Brasserie Restaurant and will work closely with both the Brasserie Head Chef and Exec Chef. This role includes menu planning, food preparation, kitchen management, and staff supervision, ensuring that all dishes are prepared to the highest standards of taste, presentation and food safety. The brasserie menu showcases the best of North Yorkshire seasonal produce and there is scope to increase the lunch time and afternoon tea trade.

Requirements:

An ambitious, enthusiastic, experienced Sous chef with a proven track record working in high-quality fresh food establishments. You must have good communication and leadership skills and be professional at all times. Need understanding of P&L, GP, menu costing, wage budgeting & purchasing. Be highly organised ensuring compliance with health & safety, COSHH, allergens and food safety. Must have a hands on approach and a passion for menu development and pushing culinary boundaries to drive the business forward.
