Overview
We are a seafood‑focused Italian restaurant in London seeking a Sous Chef.
Our menu features handmade pasta, a raw bar with oysters, whole fish grilled, crudo, and seasonal UK seafood.
The kitchen is fast‑paced and quality‑first.
Responsibilities
- Work closely with the Head Chef to deliver a healthy business and support and develop the kitchen team and product.
- Manage fish butchery, raw preparation, oyster shucking and grill section.
- Ensure compliance with HACCP for raw and seafood handling.
- Maintain calm under pressure, lead by example, and teach junior chefs passion for Italian regional seafood cooking.
Qualifications
- 2+ years as Sous Chef or strong CDP ready for a step‑up role.
- Confident with fish butchery, raw prep, oyster shucking and grill section.
- HACCP knowledge for raw/seafood handling.
- Calm under pressure, leads by example, able to teach junior chefs.
- Good level of spoken and written English.
Compensation & Benefits
- Salaries: £38k‑£42k plus tronc and tips (depending on experience).
- Shift: straight shift only, 4 days per week, 50 hours.
- 28 days holiday, staff meal, birthday paid off and complimentary dinner at the restaurant.
