You will help lead the day-to-day kitchen operation across our Dalston production kitchen and Canary Wharf site. This is a hands-on role combining food production with team supervision and responsibility for ensuring that food is prepared safely, consistently and on time.
Responsibilities:
- Manage and supervise the kitchen and food preparation team during your shifts
- Organise daily production, prep priorities and mise en place
- Support daily food preparation and batch cooking
- Ensure recipes, portion sizes and production specifications are followed accurately
- Coordinate food production at our off-site Dalston kitchen
- Oversee preparation and transfer of food for service at Canary Wharf
- Reheat, finish and assemble dishes on-site
- Maintain consistent food quality, portioning and presentation
- Allocate tasks and keep the team working efficiently during production and service
- Maintain high food hygiene, food safety and cleanliness standards
- Complete and oversee relevant food safety and kitchen records
- Support stock management, deliveries and ingredient rotation
- Flag stock shortages, production issues or operational problems promptly
- Help manage kitchen set-up, service preparation and close-down
- Support the Founder and wider team in establishing strong kitchen systems during the pop-up
Approximately 40 hours per week, around five days per week, including some weekends.
Our Canary Wharf operating hours are approximately 7.30am to 5pm, Monday to Sunday.
Food production takes place at our off-site kitchen in Dalston approximately four days per week, with service and finishing at Market Halls Canary Wharf.
Requirements:
- Previous professional kitchen or food production experience
- Experience supervising or leading a small kitchen team
- Confident organising daily prep and production
- Able to follow recipes and production specifications accurately
- Strong understanding of food hygiene and food safety
- Level 3 Food Safety qualification preferred
- Fast, organised, practical and reliable
- Calm and efficient during busy periods
- Comfortable working in a small, hands-on team
- Good communication and leadership skills
- Experience with Indian food is useful but not essential
- Experience in batch production, catering or high-volume food preparation would be particularly useful
