Objectives:
- Management of stock, inventory and understanding of Food Cost
- Basic knowledge of the artistic direction of the group
- Quality control and assurance of mise en place, knowledge of hygiene and safety regulations
- Management of the pass and service
- Knowledge of basic cooking techniques, recipe reproduction and knowledge of fresh pasta
- Training of junior staff, onboarding and team motivation
