The Assistant General Manager is a pivotal senior leadership role, supporting the General Manager with the commercial performance and day-to-day delivery of the catering operation at the Scottish Event Campus (SEC).
The role combines operational ownership and financial responsibility within delegated areas with the wider venue leadership, client partnership, people and commercial responsibilities. The Assistant General Manager will help ensure that all catering services – from large-scale conferences and exhibitions to bespoke VIP events – are delivered to consistently high standards.
Working closely with the General Manager, client representatives, Levy stakeholders and Heads of Department, the role will drive operational excellence, develop people, improve the guest experience, identify commercial opportunities and support the continued development and improvement of the food and drink offer.

Assistant General Manager - The Role
Operational Leadership & Delivery
- Take senior operational ownership for the day-to-day delivery of consistent and exceptional product quality and service standards across conferences, exhibitions, banqueting and other event styles.
- Ensure seamless coordination between kitchen, back-of-house and front-of-house teams and maintain consistently high standards of food quality, presentation and service.
- Drive a guest-focused culture through visible leadership, strong hospitality standards and a clear understanding of client and customer needs.
- Regularly monitor operational performance, staffing, presentation, quality and service standards across departments, taking action where standards are not achieved.
- Work with Compass procurement, third-party suppliers and contractors to underpin product quality, effective service delivery and cost-effective margins.
- Maintain strong brand standards across all areas of the operation and ensure consistent Levy signature culture.
- Use structured, regular communication and meetings with client representatives, Team Managers and Heads of Department to maintain clarity of expectations and delivery.
Client & Stakeholder Relationship Management
- Build and maintain strong relationships with clients, event organisers and venue stakeholders to understand requirements, preferences and wider priorities.
- Collaborate with clients, sales and events teams to plan and execute successful events, meetings and functions.
- Represent Levy UK& I at SEC and Levy in client meetings and high-profile engagements.
- Proactively manage expectations, address concerns and resolve issues to ensure satisfaction, continuous improvement and repeat business.
- Support client initiatives and wider venue priorities, including relevant WITY and community engagement criteria.
People Leadership & Development
- Lead, inspire and develop the permanent management team and wider catering team to ensure consistent and effective operational delivery.
- Ensure robust recruitment, sourcing and deployment plans exist to provide large volumes of casual workers against differing event requirements.
- Build and sustain a high level of team energy and engagement, focused on great food, hospitality, service excellence and accountability.
- Conduct regular performance reviews, talent management and succession planning activity against agreed and measurable performance objectives.
- Ensure effective two-way communication throughout the venue and recognise and celebrate success.
- Work closely with HR and Heads of Department to ensure complete and consistently effective adherence to legal and people obligations.
Financial Management & Commercial Performance
- Support the General Manager and Location Accountant in delivering accurate and timely forecasts, budgets and P&L performance and operational cost control within delegated areas of responsibility.
- Maintain strong control of labour and operating costs, continually identifying more efficient ways of operating without compromising quality or service.
- Use data and performance reporting to identify opportunities for operational improvement, efficiency and growth.
- Review key performance and growth measures regularly, identifying opportunities and remedial actions and putting tactical plans in place.
- Identify and maximise revenue opportunities through upselling, innovative catering offers and increased spend per transaction.
- Ensure strong commercial understanding and awareness through Line Managers and their teams.
- Use operational and financial insight to support profitability, performance improvement and sustainable growth.
Sales, Business Development & Product Development
- Support business growth by identifying opportunities to increase revenue and spend across the operation.
- Work closely with sales and marketing teams to promote catering services and strengthen relationships with key clients.
- Develop and maintain client relationships to secure repeat business and support long-term commercial partnerships.
- Liaise with culinary and marketing specialists to implement continuous product development and evolve the food and drink offer.
- Stay current with industry trends, technology and best practice to continuously innovate and elevate operational performance.
- Ensure menu development and delivery reflects dietary requirements, health and safety standards and Levy brand expectations.
Quality Assurance & Guest Experience
- Ensure exceptional guest experiences across all events and consistently high standards of cleanliness, presentation and service.
- Monitor client and guest feedback and ensure actions are taken to improve the experience.
- Establish and enforce quality control measures for food preparation, presentation and service delivery.
- Conduct regular operational reviews, inspections and service audits, implementing continuous improvement initiatives based on feedback and industry trends.
