We’re looking for a hands-on, driven Fine Dining Sous Chef to support the Head Chef and help lead a high-performing kitchen team in a fast-paced, premium environment. This is a key leadership role with real responsibility, creative input, and room to grow.
What You’ll Bring
- Proven experience as a Sous Chef (or strong Junior Sous ready to step up) in a high-volume, high-quality kitchen

- Excellent organisational skills and attention to detail
- Solid commercial awareness, with experience controlling costs and minimising waste
- Good knowledge of food trends, modern presentation styles, and fine dining standards
- Confident communicator with the ability to work closely with FOH and stakeholders
- Calm under pressure with a problem-solving, proactive mindset
- Relevant Food Hygiene & Health & Safety knowledge
Responsibilities
- Support the Head Chef in the day-to-day running of the kitchen and lead the operation in their absence
- Maintain exceptional standards of food quality, presentation, and consistency
- Ensure full compliance with Health & Safety, Food Safety, and hygiene standards at all times
- Supervise, motivate, and develop the BOH team (CDPs, Commis, KPs, apprentices)
- Assist with menu planning, costing, and delivery in line with budgeted GP margins
- Oversee stock control, ordering, deliveries, storage, and waste management
- Ensure accurate allergen information, menu availability, and correct food labelling
- Drive a positive working culture and strong collaboration between BOH and FOH teams
- Support recruitment, training, coaching, and performance management of kitchen staff
- Maintain EHO rating of 5* and achieve internal audit and compliance targets
- Lead by example during busy services with a strong, hands-on approach
