We're recruiting an experienced Chef Manager who is passionate about exceptional food and world-class customer service, and who can confidently oversee all Compass Group UK&I catering and service operations for Chartwells on a full time basis, contracted to 40 hours per week.

As a Chef Manager, you will be responsible for ensuring our kitchens and service counters run smoothly and helping to deliver truly incredible food experiences.

Your key responsibilities will include

  • Understand and deliver all contractual food service requirements
  • To ensure a consistent, elevated and innovative food offer is available to our clients at all times whether it is on the counter, external events or hospitality
  • Ensure all prepared food is served at the correct temperatures and meets the specification and standards detailed within the menu kitbag
  • Ensure all retail items are correctly priced and labelled in line with current Food Safety Legislation
  • Communicate any on site client changes to line manager
  • Communicate regularly with client to include monthly and quarterly reporting
  • Action plans are completed following client satisfaction and student surveys
  • Promote the unit and act as a Compass Advocate at all time
  • Ensure all company promotions are correctly implemented and look to upsell (where applicable)
  • Identify any additional sales or enhanced service opportunities and discuss with line manager
  • Analyse and manage effectively all in-unit costs and work to budgeted performance ratios
  • Ensure full purchasing compliance
  • Ensure sales records and cost of sales are accurately inputted and maintained
  • All food wastage is recorded and minimised
  • Ensure all customer requirements are communicated to all relevant departments in advance
  • Receive, read and understand the contents of the Employee Guide to Working with Compass
  • Taking reasonable care for your own health and safety and that of others who may be affected by what you do or what they fail to do.
  • Complete the “Unit Manager Induction – Licence to Operate” within 2 weeks of commencing employment.
  • Complete Level 3 HSE e-learning courses as appropriate within 26 weeks of commencing employment.
  • Ensure that all HSE incidents are correctly reported and investigated with relevant reviews of work procedures.
  • Ensure that all appropriate HSE and Food Safety (HACCP) information, instruction, training and supervision is provided to all employees within your control to enable them to carry out their work safely and effectively.
  • Ensure relevant Risk Assessments are displayed, trained to staff members and reviewed annually
  • Maintain up to date training records for all employees under your control.
  • Consult with employees under your control, other contractors sharing the site and Clients on HSE matters.
  • Report HSE issues beyond your control to your line manager.
  • Implement the requirements of HSE campaigns that are initiated to improve HSE performance.
  • Team are supported, trained, coached and developed.
  • Labour turnover is monitored, and team is fully recruited
  • Produce and utilise succession plan
  • To encourage customer participation and implement action plans
  • Hold regular team talk briefings, and daily service briefs between front and back of house
  • Ensure staff rotas are planned in advance, and all hours are recorded on the Our Time system.

Our ideal Chef Manager will

  • Be passionate about great-tasting food and exceptional customer service
  • Have a minimum of two years of catering experience
  • Have experience managing teams in a similar role
  • Hold an NVQ Level 1 & 2 or City & Guilds 706/1 and 2
  • Hold a Basic Food Hygiene certificate
  • Demonstrate brilliant financial acumen
  • Have excellent communication and organisational skills
  • Be an ambitious and motivated individual who is always looking to upskill
