As a Sous Chef at CÉ LA VI you will be a vital part of our culinary leadership team, working closely with the Executive Chef. You will help oversee kitchen operations, manage the culinary team, and ensure the highest quality of cuisine is consistently delivered to our guests. Key Responsibilities

  • Collaborate with the Executive Chef in menu planning, recipe development, and costing.
  • Oversee the daily operations of the kitchen, ensuring efficiency and adherence to quality standards.
  • Lead and mentor kitchen staff, including Chef de Parties, Commis Chefs, and Line Cooks.
  • Ensure strict compliance with food safety, sanitation, and hygiene regulations.
  • Manage inventory, ordering, and stock rotation.
  • Assist in maintaining kitchen equipment and facilities.
  • Participate in creating a positive and collaborative kitchen culture.
  • Step in to lead the kitchen in the absence of the Executive Chef.

Qualifications

  • Proven experience as a Sushi Chef.
  • Proven experience as a Sous Chef or similar role in a high-end restaurant or hotel.
  • A culinary degree or equivalent certification is highly desirable.
  • Strong culinary skills and a demonstrated track record of culinary excellence.
  • Leadership skills with experience in supervising and mentoring kitchen staff.
  • Proficiency in menu planning, recipe development, and cost control.
  • In-depth knowledge of food safety, sanitation, and hygiene standards.
  • Ability to thrive in a high-pressure, fast-paced kitchen environment.
  • Exceptional communication and teamwork skills.
  • Flexibility to work evenings, weekends, and holidays as required.
