£24,000 per annum, 40 hours per week over seven days including weekends and bank holidays.
We have a fantastic opportunity for a creative Chef de Partie to join our team. You will lead the day-to-day operation of your assigned kitchen, ensuring the highest standards of quality and presentation at all times. Reporting to the Head Chef, you will work closely with other departments on the Estate and local suppliers to provide a high quality product in complementing the local produce theme.
Job Purpose
The Chef de Partie will lead the day-to-day operation of a designated kitchen, ensuring that recipes and specifications are followed precisely and all Health and Safety requirements are adhered to.
Duties & Responsibilities
- Ensure food is prepared, presented and served consistently to the highest standard.
- Closely monitor food preparation making sure all recipes are followed precisely.
- Assist with any special functions, including those which occur outside normal working hours.
- Feedback to the Head Chef of issues with recipes, specifications, equipment or processes.
- Supervision of any chefs in line with company policies.
- Provide relevant training to colleagues as required.
- Communicate with the Stock & Data Controller daily, ensuring perishable items are used in a timely and effective manner and stock is requested for the next day’s cooking.
- Carry out regular, consistent stock checks to ensure shortage is pro-actively avoided.
- Follow all processes and procedures within the catering team and the wider company.
- Cover other relevant areas of the catering business as required and be prepared to cover occasional out of hours work as necessary including private dining events.
- Share best practice with other members of the kitchen team.
- Carry out all aspects of Food Hygiene and Health and Safety and operate in accordance with Castle Howard’s Health and Safety policies at all times.
- Undertake any other duties as may be reasonably required.
Qualifications Person Specification
Education/Qualifications/Training
- NVQ Level 2 in Catering and Hospitality, or similar.
- Food Hygiene Level 2 or above.
Knowledge & Experience
- Experience of cooking at an AA rosette level establishment.
- Good working knowledge and experience as a chef, with the drive to excel and creativity to develop dishes to company requirements showing personal flare.
- Working knowledge and practice of HACCP procedures.
- Ability to manage a kitchen and other members of catering staff.
Competencies
- Ability to direct and plan food preparation.
