Carnoustie Golf Links, the world’s toughest test of golf and host to the 147th Open in July 2018, is home to a world-class golf centre and The Rookery Restaurant & Bar, which has built a reputation for delivering exceptional dining experiences. The menu is based on the use of Angus region seasonal ingredients, bringing together the best of the land and sea.
The role of Food and Beverage Assistant Manager works with the Food and Beverage Supervisors to aid in the responsibility of day-to-day supervision of the agreed standard of service for our customers across our Food and Beverage venues.
Key duties and responsibilities:- Lead day-to-day front of house operations across restaurant and bar, ensuring consistently high service standards.
- Coach, brief, motivate and develop the team; build confidence so staff can make sound decisions when supervisors are absent.
- Maintain strong product knowledge (menus, cocktails and wine pairing) and drive sales through upselling and recommendation.
- Deliver excellent guest experience: anticipate needs, manage feedback, and support complaint prevention, investigation and resolution.
- Support effective stock and cost control, contributing to targeted average spend and operational performance.
- Oversee service processes: reservations, POS ordering, billing, cash handling and end-of-day till reconciliation/banking.
- Ensure standards and compliance: uniform and hygiene, health & safety/cleanliness, equipment use, maintenance, and daily/weekly cleaning.
- Close and secure venues at end of service (locking/alarming) and promote CGL values and brand standards at all times.
- Identify and suggest improvements to products, equipment and ways of working to enhance the overall offering.
- Strong front of house experience in high-quality restaurant and bar operations.
- Excellent communication and interpersonal skills with the confidence to engage with guests and colleagues at all levels.
- Ability to lead by example, support and coach the front of house team.
- High attention to detail and strong memory for menus, specials and complex orders.
- Reliable, resilient and able to work on your feet for extended periods in a busy environment.
- Team-focused approach, committed to meeting required standards including hygiene and health & safety.
- Food Safety in Catering.
- General Health and Safety in the Workplace inc. COSHH, Manual Handling and Fire Safety.
- First Aid at Work training on the above will be provided if not already achieved.
