Supplying prestigious establishments such as the Grosvenor Hotel, Carden Park Hotel, and many local pubs and restaurants, we take pride in delivering exceptional quality, traditional craftsmanship, and outstanding customer service. Our on-site butchery counter is well stocked daily, and our team of skilled butchers prepare everything from locally sourced Longhorn beef and Salt Marsh lamb to hand-linked sausages and dry-cured bacon.
The Role
We are looking for a skilled and motivated Full-Time Butcher to join our experienced team. The successful candidate will take an active role in all aspects of the butchery, ensuring our high standards of presentation, quality, and food safety are maintained at all times.
Key Responsibilities:
- Cutting, trimming, boning, and preparing a full range of meats to specification.
- Serving customers at the butchery counter with a professional, friendly manner.
- Preparing bespoke orders for both retail and wholesale clients.
- Maintaining excellent product presentation and stock rotation.
- Ensuring compliance with food hygiene, health, and safety standards.
- Assisting with displays, packaging, and labelling of products.
- Supporting seasonal promotions and special product ranges (e.g., Christmas Hampers).
- Working collaboratively with the wider team to deliver exceptional customer satisfaction.
Requirements:
- Proven experience as a butcher (retail or catering trade).
- Strong knife skills and knowledge of meat cuts, preparation, and presentation.
- Excellent understanding of food hygiene and safety procedures.
- Good communication and customer service skills.
- Attention to detail and pride in workmanship.
- Ability to work efficiently in a busy environment and as part of a team.
Desirable (but not essential):
- Level 2 or 3 Butchery Qualification (or equivalent experience).
- Experience in sausage making, curing, or smoking.
- Knowledge of farm-to-fork or locally sourced meat supply chains.
