As Group Bar Manager, you will work alongside the Beverage Director to drive the bar strategy across the Caprice Restaurants portfolio, ensuring every venue delivers exceptional drinks, outstanding service and world‑class guest experiences.

This is a hands‑on leadership role, balancing operational excellence with creativity, commercial awareness and people development.

You’ll support our bar teams to consistently raise standards, develop talent and ensure our beverage offering remains at the forefront of London’s luxury hospitality scene.

Key Responsibilities

  • Operational Excellence
  • Support the Beverage Director in delivering the group’s beverage strategy across all restaurants.
  • Maintain exceptional service standards and consistency throughout the portfolio.
  • Conduct regular site visits, operational audits and coaching sessions to ensure compliance with brand standards.
  • Support new restaurant openings, refurbishments and operational projects.
  • Drive continuous improvements in bar operations, efficiency and guest experience.
  • Travel across the UK and internationally to support our restaurants, openings, training initiatives and operational excellence programmes.
  • Lead by example through regular on‑site operational shifts, providing hands‑on support during key service periods and ensuring brand standards are consistently delivered.
  • Team Development
  • Coach, mentor and develop Bar Managers and Assistant Bar Managers.
  • Identify high‑potential talent and build succession plans across the group.
  • Deliver regular training on cocktails, spirits, wine, sake, service standards and luxury hospitality.
  • Support recruitment, onboarding and retention of bar talent.
  • Foster a positive, high‑performance culture across all bar teams.
  • Beverage & Menu Development
  • Collaborate with the Beverage Director on seasonal cocktail lists, beverage innovation and menu development.
  • Ensure beverage menus are executed consistently across every venue.
  • Stay ahead of industry trends, identifying new products, suppliers and guest experiences.
  • Build strong relationships with suppliers to deliver tastings, educational sessions and brand partnerships.
  • Commercial Performance
  • Support venues in achieving revenue, gross profit and cost targets.
  • Monitor beverage sales performance and identify opportunities to increase spend per guest.
  • Analyse stock variances, wastage and purchasing performance, implementing improvements where required.
  • Partner with General Managers to develop action plans that improve profitability and operational performance.
  • Compliance & Standards
  • Ensure licensing regulations, health & safety and food safety requirements are fully met.
  • Champion responsible alcohol service and legal compliance.
  • Ensure stock control procedures, ordering and inventory processes are consistently followed.
  • Maintain immaculate presentation and operational standards across every bar.
  • Collaboration
  • Partner with General Managers, Executive Chefs and senior operational leaders to deliver exceptional guest experiences.
  • Work closely with the Marketing team on beverage campaigns, activations and product launches.
  • Support company events, VIP experiences and strategic brand collaborations.
