THE ROLE: Great Scots is a stylish Scottish bar space with a nod to the past through Great Scots who adorn the walls. Since 2009, it is our well-known and loved main gathering place offering a friendly and cosy environment. It provides guests, owners and members the perfect setting for relaxing by the baronial fire with a dram in hand chosen from the extensive range of Scotch Whisky expertly served by you and your team. Reporting to our Director of Food and Beverage, you will lead the team in the table service of food and beverage from our all-day menu including champagne by the glass and amazing cocktails, and our collection of premium wines and spirits. The scope of your role is to ensure your sizeable team delivers exceptional service to meet our vision to be Scotland’s leading luxury resort.
As a Head of Department you will hold responsibility in managing all aspects of your outlet including recruitment, training and development of your team, guest satisfaction, profitability and meeting all statutory requirements. Typical daily tasks as Bar Manager will include:
- Allocation of duties for the day, week and month
- Mise-en-place and stock management
- Team Briefings
- Kitchen liaison
- Setting of service goals and incentives
- Hosting the Door and the Floor
- Checking on tables and VIPs
- Handling and resolving feedback or issues as they arise
- Providing hands-on support to the team where needed
- Debriefs
- Monitoring Liquor GP
- Overseeing payments and Res Diary tasks
- Ensuring completion of all pre-set tasks and checklists
- End of shift reports and banking
- Communicating with relevant Managers on any critical issues

TO BE ELIGIBLE TO APPLY YOU WILL ALSO NEED:
- Experience of working in Operations in a 4/5* hotel environment
- Current/recent management experience within a high volume quality bar environment
- Strong whisky and cocktail/mixologist experience and ability to train this throughout the team
- Excellent interpersonal skills and a passion for people and service
- WSET Level 2, Personal Licence Holder, Food Hygiene, First Aid and Trainer qualifications all desirable
- Strong IT skills are essential and Res Diary experience would be an advantage
- Due to the patterns of work, and layout and location of the resort a UK Driving Licence would be beneficial.
