The Role

Are you a passionate and experienced culinary professional ready to take the next step in your career? We’re looking for a Senior Sous Chef to join our dynamic resort team, supporting the Resort Head Chef in overseeing all kitchen operations across multiple outlets.

About The Role

As Senior Sous Chef, you’ll play a pivotal role in maintaining exceptional culinary standards throughout the resort. You won’t be tied to one kitchen—instead, you’ll provide leadership, guidance, and operational support across all outlets, ensuring consistency, quality, and innovation in every dish we serve.

Key Responsibilities

  • Lead and support kitchen teams across all resort outlets, ensuring high standards of food quality, hygiene, and presentation.
  • Collaborate with the Resort Head Chef on menu development, food tastings, and operational strategy.
  • Train and mentor chefs and kitchen staff, fostering a culture of excellence and continuous improvement.
  • Monitor food costs, stock control, and inventory management to maximize profitability.
  • Ensure full compliance with health & safety, food safety, and HACCP regulations.
  • Act as a role model for professionalism, cleanliness, and teamwork.

  • Proven experience in a senior kitchen role, ideally within a luxury resort or multi-outlet operation.
  • Strong leadership and communication skills.
  • Passion for Scottish produce and modern culinary trends.
  • Ability to manage multiple teams and kitchens with efficiency and flair.
  • Competency in kitchen systems such as HOTSOS, Procure Wizard, Fourth, and others desirable.
