Job Description Major’s Grill, the signature restaurant of Cambridge House in Mayfair, is a glamorous ode to mid‑century dining, inspired by classic London grill traditions. As Chef de Cuisine, you will shape the restaurant’s culinary direction, develop exceptional menus, and set standards that ensure consistency, creativity, and quality. Key Responsibilities
- Lead day‑to‑day kitchen operations, ensuring every dish reflects our commitment to refined quality, consistency, and presentation.
- Design, develop, and refine menus (à la carte, seasonal specials, tasting menus, private dining, and events) that embody Cambridge House’s personality, blending creativity with timeless standards.
- Oversee procurement and sourcing of fresh ingredients, working closely with the Executive Chef and suppliers to secure the finest produce while ensuring cost‑effective and sustainable food operations.
- Manage kitchen operations—food preparation, cooking, plating, timing, and service flow—ensuring smooth, high‑volume service without compromising quality.
- Guide, mentor, and support kitchen team members, promoting skill development, collaboration, and a positive, respectful working environment.
- Recruit, onboard, and develop kitchen team members to build a cohesive, talented, and motivated team aligned with Cambridge House culture.
- Maintain the highest standards of hygiene, food safety, and kitchen compliance at all times.
