Job Description

As Head Baker, you will lead and oversee the bakery programme at Cambridge House and will ensure every product reflects our commitment to quality, consistency and exceptional craftsmanship.

This is an overnight role, offering the opportunity to shape the identity and standards of our breads and baked goods from the very beginning, creating products that will become part of the daily rhythm of the house.

Key Responsibilities

  • Oversee the night production for our baked goods department, ensuring consistent production of breads and specialty baked goods to the highest standard.
  • Establish and develop a distinctive range of products for breakfast, restaurants, afternoon tea and in-room dining.
  • Work closely with the Executive culinary team and Head Pastry Chef on seasonal development and new creations that reflect the culinary direction of the house.
  • Manage production planning to ensure all outlets and services are supplied efficiently while maintaining exceptional quality and freshness.
  • Maintain robust standards of presentation, flavour and texture across every baked item served within the property.
  • Guide and support team members, ensuring clear communication, organisation and consistency within the section.
  • Monitor ingredient sourcing, ordering and stock management while maintaining careful cost awareness.
  • Ensure full compliance with food safety, hygiene and health & safety standards at all times by maintaining a clean, organised and well-structured bakery environment.
  • Contribute to the wider kitchen culture by collaborating positively with team members across all culinary sections.

Qualifications

  • Significant experience as a Head Baker or Senior Baker within a luxury hotel, high-end restaurant or artisan bakery.
  • A deep understanding of artisanal bread production, fermentation, sourdough, laminated doughs and classic viennoiserie.
  • Passion for working with high-quality ingredients and producing baked goods with precision, consistency, and creativity.
  • Strong organisational skills with the ability to manage production schedules and multiple service outlets.
  • A calm and professional approach in a high-standard kitchen environment.
  • A collaborative mindset and genuine enjoyment of working alongside other team members.
  • Knowledge of food safety regulations and best practice in professional kitchens.
