This is a role focused on leadership, team development and commercial performance, building an operation that feels confident, consistent and aligned with the direction of the hotel.

With new meeting spaces launching and private dining becoming a growing part of our business, this is an opportunity to help shape how guests, clients and teams experience The Gantry.

The Role

  • You’ll lead the overall food and beverage operation across restaurant, bar, private dining and meeting spaces — ensuring the experience is consistent, commercially focused and aligned with where the hotel is heading.
  • This is a leadership role centred around team development, operational direction and commercial performance.
  • Leading the F&B operation across all guest-facing spaces.
  • Supporting the launch and development of new meeting spaces and private dining experiences.
  • Building, developing and mentoring a confident, forward-thinking team.
  • Driving consistency in service standards and guest experience.
  • Managing staffing structures, rotas and payroll control.
  • Driving revenue, spend and departmental profitability.
  • Working closely with Kitchen, Rooms and Commercial teams.
  • Supporting the wider repositioning and growth of the hotel.

About You

You already understand what strong hotel F&B operations look like and know how to build teams that deliver with confidence and consistency. You are:

  • Comfortable leading within a fast-moving lifestyle or London hotel environment.
  • Commercially aware, with a strong understanding of labour, revenue and profitability.
  • A confident leader who develops and empowers teams.
  • Organised, detail-focused and operationally strong.
  • Calm under pressure and able to adapt quickly.
  • Focused on creating an experience that feels considered, confident and commercially successful.

Why The Gantry

The Gantry is a design-led hotel in Stratford, part of Hilton’s Curio Collection. With a growing meeting spaces offer, evolving private dining experiences and a strong F&B identity, the hotel is entering its next phase. This is a hotel reshaping its spaces, building new revenue streams and creating a more defined guest experience across the business. For the right person, this is an opportunity to help lead that evolution.

  • Competitive salary and Service Charge Bonus and incentives.
  • Hilton and Cairn Group benefits and discounts.
  • Development opportunities within Cairn Group.
