Our Central Bakery supplies fresh artisan breads, viennoiserie, pastries and doughs daily to our branches, maintaining the highest standards of quality and consistency.. . We are looking for an experienced '*Production Baker*' to join our Central Bakery team. This is an excellent opportunity for a skilled baker who is confident working in a high-volume production environment and can produce high-quality bakery products with minimal supervision.. .
Key Responsibilities
- Produce bakery products according to company recipes and daily production schedules..
- Prepare and bake artisan breads, focaccia, brioche, pizza dough, scones, croissants, macarons, frangipane products and other bakery items..
- Accurately weigh, mix, ferment, shape, proof and bake products to company standards..
- Ensure consistent quality, presentation and portion control across all products..
- Meet daily production targets to supply more than 20 branches..
- Monitor fermentation, proofing and baking processes to achieve the best results..
- Maintain excellent food safety, hygiene and HACCP standards..
- Minimise waste through efficient production and stock management..
- Assist with stock rotation and ingredient preparation..
- Maintain a clean, organised and safe working environment..
- Work closely with the Senior Bakery Chef and production team to ensure smooth daily operations..
Requirements
- Minimum '*2 years' experience'* working as a baker in a commercial or production bakery..
- Experience producing artisan breads and dough-based products..
- Good knowledge of dough mixing, fermentation, proofing and baking techniques..
- Experience with laminated doughs and croissant production is highly desirable..
- Ability to work accurately from established recipes..
- Good understanding of food safety and hygiene standards..
- Ability to work efficiently in a fast-paced production environment..
- Reliable, punctual and able to work independently as well as part of a team..
- Flexible to work early morning shifts and weekends when required..
