Angela Hartnett is looking for a Junior Sous Chef to join the team at Murano Restaurant in Queen Street Mayfair. Murano is a Michelin‑starred restaurant led by Angela Hartnett. For over 17 years, we have built a reputation for consistency, high standards, and a strong, supportive team culture. Our cooking is Modern European with a strong Italian influence — ingredient‑led, seasonal, and focused on simplicity done well.
This role is ideal for a strong Senior Chef de Partie who is ready to take the next step into kitchen management. We are looking for someone with experience in Michelin‑starred or high‑level kitchens, who is technically confident, organised, and keen to develop their leadership skills. A good understanding of Italian flavours and seasonality is important, along with attention to detail and pride in execution.
As Junior Sous Chef, you will work closely with the Head Chef, Angela, and Development Chef Em Brightman, supporting the day‑to‑day running of the kitchen and assisting with menu development. This is a hands‑on position — you will run sections, support service, and step onto the pass as needed, while helping to maintain standards across the brigade. A key part of the role is supporting and training junior chefs, leading by example and helping to build confidence and consistency within the team.
You will also assist the Head Chef with organisation, stock control, hygiene standards, and food cost awareness, while continuing to develop your own management skills. We are looking for someone calm, reliable, and eager to learn — a team player who can handle busy services without ego and who genuinely cares about the people they work with. Creating a positive, respectful kitchen environment is central to everything we do at Murano, and the Junior Sous Chef plays an important role in supporting that culture.
