This includes washing utensils, glasses, bar equipment, shelving, floors, sanitising counter tops and cutting boards and maintaining all areas to health code standards.

When they’re the last to leave, the bar staff puts garnishes and utensils away, cleans and mops the floors, and turns off all electrical items for a shutdown.
