Most hospitality jobs are about maintaining what already exists. This role is about helping build what comes next. Buddies London is an ambitious East London-born halal quick-service restaurant serving fried chicken, burgers, wraps and doner, inspired by the flavours, culture and energy of the communities we serve. We are looking for a hands‑on Store Leader / Operations Lead to help take Buddies Bow to the next level. This is not a role for someone who simply manages shifts. We are looking for a leader who takes ownership, drives performance, develops people, solves problems and treats the business as if it were their own. For the right individual, this role offers a genuine pathway to senior leadership responsibility and potential long‑term equity participation based on performance and contribution.

The Role

You will be responsible for the day‑to‑day leadership and performance of the restaurant. You will work closely with ownership to improve sales, profitability, customer experience, team performance and operational standards. Success will be measured by outcomes, not activity.

  • Lead daily restaurant operations.
  • Drive weekly sales growth and customer transactions.
  • Increase Average Order Value (AOV).
  • Manage labour productivity and scheduling.
  • Control food costs, waste and stock.
  • Recruit, train and develop team members.
  • Ensure opening, closing and operational procedures are followed consistently.
  • Maintain cleanliness, food safety and compliance standards.
  • Identify problems early and implement practical solutions.
  • Help build systems and processes that support future growth.

What We Are Looking For

  • Previous experience in hospitality, retail, QSR or restaurant operations.
  • Strong leadership and communication skills.
  • Commercial awareness and understanding of business performance.

Your performance will be assessed against five core areas:

  • Driving weekly revenue, transactions and AOV.
  • Profit Control (25%) Managing labour, food costs, waste and operational efficiency.
  • Customer Experience (20%) Improving customer satisfaction, reviews and repeat business.
  • Building a strong, accountable and high‑performing team.
  • Systems & Standards (10%) Ensuring operational discipline and franchise‑ready processes.
