The Clog & Billycock is a well-established country pub just outside Blackburn seeking an experienced and talented Head Chef. In this role you will develop menus, manage the kitchen, and uphold the highest standards of food quality and presentation while leading the culinary team to success.

Responsibilities

  • Lead menu development in collaboration with the Executive Cooks and the pub manager.
  • Oversee daily kitchen operations, ensuring a clean, safe, and efficient working environment.
  • Manage stock, control costs, maintain profit margins (GPs) and labour schedules.
  • Cultivate a positive food culture and create an inclusive, supportive working atmosphere.
  • Coordinate with senior sous chefs and kitchen staff to deliver high‑volume, premium fresh‑food service.
  • Drive business growth through effective collaboration with the pub manager and creative menu planning.

Qualifications

  • Significant experience as Head Chef, Chef Manager, Kitchen Manager or Senior Sous Chef in a busy, high‑volume environment.
  • Strong culinary skills and a creative approach to menu design.
  • Excellent business acumen with proven ability to manage stock, GPs and labour controls.
  • Confident leadership skills with a focus on team development and inclusivity.

Compensation

  • Bread and Butter Package up to £44,000 (includes tronc and profit share).
  • Basic salary up to £40,000.
