We are looking for an experienced and hands-on Head Chef with a strong background in Italian cuisine and excellent knowledge of beef, steaks and grill cooking. You will lead the kitchen team while maintaining high standards of quality, consistency, organisation and food cost control. Lead, organise and motivate the kitchen team during preparation and service. Take an active, hands-on role in the kitchen and during busy services. Ensure consistently high standards across every dish leaving the kitchen. Manage the grill section to an excellent standard, including premium steaks, different beef cuts and cooking temperatures. Manage daily prep, ordering, stock levels and kitchen organisation. Monitor food costs, portion control, wastage and GP. Maintain excellent food hygiene, HACCP and kitchen cleanliness standards. Train and develop the kitchen team and maintain clear kitchen procedures. Work closely with ownership on menu development, seasonal dishes and specials. Ensure recipes, portions and presentation standards are followed consistently. Previous experience as a Head Chef or experienced Senior Sous Chef ready to progress. Strong knowledge and experience of Italian cuisine . Excellent knowledge of beef, premium steaks, different cuts and grill techniques . Confident cooking steaks consistently to different temperatures. Strong leadership and kitchen management skills. Good understanding of food cost, GP, stock control and waste management . Organised, reliable and able to perform under pressure. High standards of cleanliness, discipline and attention to detail. Passionate about ingredients, quality and consistency.
