About The Role

As General Manager of BrewDog Glasgow Merchant City, you’ll take full ownership of the bar and lead from the front every day. This is a hands-on leadership role where you’ll set the standard, drive commercial results and build a high-performing team that delivers unforgettable guest experiences.

You’ll be responsible for the overall performance of the bar, from people and culture to profitability and growth. With the autonomy to shape the venue and the support of a wider leadership team behind you, this is a chance to truly make your mark.

Key Responsibilities Include

  • Leading by example on every shift, setting the tone, energy and standards.
  • Running a tight, well-organised operation that consistently delivers outstanding guest experiences.
  • Recruiting, managing, coaching and developing a strong team across bar, floor and kitchen.
  • Owning the commercial performance of the venue, including P&L, stock management, labour planning, cost control and sales growth.
  • Ensuring exceptional standards of service, safety, cleanliness and compliance at all times.
  • Building a positive, inclusive and motivated crew culture where people feel supported, challenged and proud to work.
  • Championing beer education through tastings, training and everyday knowledge-sharing, making beer passion part of the venue’s DNA.

About You

You’re a confident, hands-on leader who thrives in a fast-paced hospitality environment and genuinely loves great beer and brilliant service. You lead by example, bring energy to every shift, and know how to get the best out of your team while holding high standards.

You’re commercially minded, people-focused and comfortable taking full ownership of a venue’s performance. You enjoy building strong teams, developing future leaders and creating a positive culture where everyone pulls together and takes pride in what they do.

You’ll Bring

  • Proven experience leading a high-volume hospitality venue, ideally as a General Manager or equivalent.
  • A hands-on leadership style with the ability to motivate, coach and develop teams at all levels.
  • Strong commercial awareness, with experience managing P&L, labour, stock and costs.
  • A passion for delivering outstanding guest experiences, every time.
  • Confidence making decisions, solving problems and driving continuous improvement.
  • A genuine interest in beer, food and hospitality and a desire to keep learning and sharing that knowledge with others.
