Role overview
The role of Sous Chef involves preparing and cooking using fresh ingredients, placing orders with suppliers, presenting high-quality dishes, and leading the kitchen team. You will support the Head Chef and, in their absence, lead the operation.
Main Accountabilities
- Manage and direct the kitchen team to the standards set by the Head Chef.
- Develop menus and lead the kitchen team to prepare and deliver with support from the Head Chef.
- Maintain stock and waste control across the kitchen.
- Ensure quality control of stock and prepared foods for each service.
- Develop and monitor the kitchen team to deliver high-quality cooking efficiently.
- Maintain cleanliness and organisation of designated sections.
- Set up and cook on live stations as needed.
- Perform other duties as directed by the Head Chef, Executive Chef and Senior Management.
- Maintain a positive and proactive attitude.
- Report safeguarding concerns to the Safeguarding Team through appropriate channels.

- Undertake other relevant duties as directed by your line manager.
Essential personal characteristics
Be prepared to work independently and, at times, lead a team to deliver a high-quality service. Prepare and cook meat, fish, vegetables and carbohydrates. Manage a section daily and potentially lead the whole operation. Organise orders and manage a team for pre- and post-match food. Be willing to travel with the team for away trips and tours, and cook live stations. Maintain high attention to detail, food hygiene and health and safety practices. Plan and develop new menu ideas with the Head Chef. Be flexible to exceed guest expectations.
