Brat Climpson’s Arch is a dynamic and passionate neighbourhood restaurant serving seasonal wood-fired dishes in a unique courtyard space beneath the arches of London Fields. We place great importance on our relationships with suppliers and ensure staff are well informed about the produce we use. Located in the space where Chef Tomos Parry’s independent cooking style first took shape, the restaurant reflects that same energy. Our menu and wine list change daily. Brat x Climpson’s Arch is a friendly, enthusiastic restaurant that offers the chance to work with some of the best produce in the UK while building strong culinary knowledge and skill.
What you’ll be doing:
Curate and manage a rotating wine list that reflects Brat’s culinary ethos, sourcing rare and high-quality wines that balance familiarity with discovery.
Collaborate closely with the Head Chef and Sous Chef to ensure seamless food and wine pairings that elevate our seasonal menus.
Build strong relationships with winemakers, importers, and distributors to secure exclusive bottles and vintages.
Oversee the proper storage, care, and rotation of the wine cellar to ensure optimal conditions and reduce waste.
Develop and lead a structured wine education program for the FOH team, including tastings, service training, and knowledge sharing.
Mentor the Assistant Wine Manager and support the FOH team’s growth in wine knowledge and service confidence.
Deliver memorable guest experiences through table-side consultations, curated pairings, and storytelling that brings the wine list to life.
Host engaging wine-pairing dinners, tasting events, and private wine experiences that enhance guest loyalty and drive repeat visits.
Manage inventory, monitor costs, and prepare regular sales reports, ensuring the wine program is financially efficient while maintaining premium quality.
Work closely with the GM to monitor margins, plan reorders, and ensure consistent stock levels across all wine offerings.
Lead with passion and enthusiasm, motivating the FOH team to embrace and represent Brat’s wine program with confidence and knowledge.
What you’ll bring:
A deep, demonstrable knowledge of wine, from classic regions to emerging producers, with a strong understanding of how wine enhances food.
3–5 years of experience in a senior wine or sommelier role within a fast-paced, quality-led restaurant.
Proven ability to curate a dynamic and profitable wine list that reflects both guest preferences and emerging wine trends.
Excellent communication and storytelling skills that engage both guests and team members.
Experience mentoring and educating others in wine knowledge, from beginner to advanced levels.
Strong organisational skills and experience managing wine inventory, supplier relationships, and sales reporting.
A genuine enthusiasm for hospitality and the guest experience, with a passion for sharing the craft and culture of wine
Flexibility to work varied shifts across 5 out of 7 days.
