Back in 2019 in Paris, two friends, Charles and Victor, opened a brasserie together - the kind of place Parisians disappear into for a 3-hour lunch.. .

The role . . As a
Head Pastry Chef, you'll take ownership of the pastry section at Brasserie Olivia.. .
You'll work closely with the Head Chef at Brasserie Olivia and our Executive Pastry Chef in France to deliver consistent standards across the brand.. .
You'll confidently lead the pastry team while remaining hands‑on in production and service, ensuring everything is prepared from scratch to the highest standard.. .
You'll organise the pastry section, manage ordering and par levels while maintaining excellent food safety and quality standards.. .

- You’ll ensure every pastry and dessert is prepared from scratch, following recipes and specifications consistently.. .
- You’ll deliver exceptional quality, taste and presentation, with strong attention to detail in everything leaving the section.. .
- You’ll keep the pastry section organised, prepared and ready for every service.. .
- You’ll coach and develop the pastry team, helping build a confident, capable and engaged team.. .
- You’ll work closely with the Head Chef and Executive Pastry Chef to maintain consistent quality and standards across the pastry section.. .
- You’ll manage ordering, stock and par levels effectively, minimising waste and protecting food cost.. .
- You’ll maintain excellent food safety, cleanliness and kitchen standards throughout the section.. .
- You’ll communicate clearly with both the kitchen and front of house teams, creating a seamless experience for every guest.. .
- What you’ll bring
- You're already leading a pastry section, or you're an experienced Pastry Chef de Partie ready to step up.. .
- You have strong hands‑on pastry experience and excellent knowledge of pastry techniques, preparation and production.. .
- You're confident in producing high‑quality pastry from scratch and working accurately to recipes and specifications.. .
- You have the leadership skills to organise, support and develop a pastry team.. .
- You understand stock management, ordering, food cost, waste control and food safety.. .
- You're organised and reliable, with exceptional attention to detail and pride in delivering beautiful, consistently high‑quality work.. .
