We’re looking for an experienced, creative Head Baker to lead the bakery operation at our Bread & Wine site. This is a hands-on, senior role for someone confident across bread, viennoiserie (from-scratch lamination), cakes and cookies, with the experience to work at both batch scale and smaller, more detailed production. You’ll have real ownership of product, standards, and direction, while working closely with the Exec Chef and Managing Director as the concept continues to evolve.
The Role
As the Head Baker, you’ll be responsible for the day-to-day bakery operation at Bread & Wine, setting standards, driving creativity, and ensuring consistency across production. While you’ll be based at Bread & Wine, the role also requires awareness of the wider bakery operation, including collaboration with the night baker team, ensuring alignment on quality, process, and output. This is a role for someone who enjoys leading by example, staying close to the bench while thinking strategically about how the bakery develops.
Key Responsibilities
- Lead production across bread, viennoiserie, cakes, and cookies
- Work confidently with sourdoughs, fermentation, and from-scratch lamination
- Balance batch production with smaller, more creative runs
- Maintain exceptional standards of quality, consistency, and presentation
Creative & Development
- Drive creativity across the bakery offer, with products evolving regularly
- Collaborate with senior leadership on product direction and development
- Respond to seasonality, feedback, and commercial needs
Collaboration & Oversight
- Work closely with the Exec Chef to ensure alignment between bakery and kitchen
- Maintain strong communication with the night baker team, supporting consistency and smooth handovers
- Contribute to wider operational and production planning
Standards & Operations
- Uphold food safety, hygiene, and organisational standards
- Support training, guidance, and development within the bakery team
- Take ownership of your section while remaining flexible and solution-focused
