Bothy Distillery is an independent, small-batch whisky producer based in the heart of Glen Prosen, Angus. Inspired by the natural beauty and whisky heritage of the Scottish glens, we plan to produce handcrafted single malt whisky using traditional methods and sustainable practices. We are seeking an experienced and hands-on Distillery Lead/Manager to oversee day-to-day operations and uphold the high standards of quality and authenticity that define the Bothy brand.
Role Overview
This is a practical, leadership-focused role suitable for an experienced Distillery Assistant Manager ready to step up, or a Distillery Operator seeking the next stage in their career. The successful candidate will take responsibility for the daily running, planning and production management of the distillery and bonded warehouse, ensuring consistent spirit quality, compliance with HMRC regulations, and adherence to our small-batch production ethos. This will be a single person operation.
Key Responsibilities
- Oversee all aspects of production including mashing, fermentation, distillation, cask filling, warehousing, and record keeping.
- Ensure spirit quality and consistency through careful management of spirit cuts and sensory assessment.
- Plan and manage weekly production schedules to optimise efficiency and output.
- Maintain accurate records in compliance with HMRC, HSE and environmental regulations.
- Carry out and oversee equipment maintenance and troubleshooting of valves, pumps, heating systems, and controls.
- Uphold high standards of distillery hygiene and sanitation.
- Liaise with senior management on production targets, yield, and quality control.
- Communicate with private cask owners and work closely with the Visitor Centre manager to support visitor experiences and distillery tours.
- Support team development and contribute to the overall growth of the Bothy Distillery brand.
- Minimum 5 years’ experience in a malt whisky or craft distillery environment.
- Strong working knowledge of mashing, fermentation and distillation processes.
- Understanding of spirit cuts, quality assessment, and sensory analysis.
- Familiarity with HMRC Excise Warehouse management and duty compliance.
- Basic understanding of chemistry, yeast metabolism, and distillation science.
- Experience in maintenance and troubleshooting of distillery equipment.
- Ability to work independently in a rural and hands-on environment.
- Excellent communication and organisational skills.
Desirable Qualifications
- Diploma in Distilling (Institute of Brewing & Distilling or equivalent).
- Previous experience in brewing or fermentation science.
- First Aid or Health & Safety certification.
- Forklift and cask handling training.
Working Conditions
- Full Time (based over 4 Days), based at Glen Prosen Distillery, Angus.
- Involves physical work, including lifting malt bags and casks.
- Some lone working and flexible hours will be required.
- Must have a valid driving licence due to rural location.
Salary & Benefits
- Salary range: £40,000 – £55,000 per annum (depending on experience and qualifications).
