Role Overview
β Job Title: Sous Chef
β Location: Cambridge
β Reports To: Head Chef
β Hours: 37.5 hours per week (excluding breaks)
β Salary: Β£36,900 per annum
β Plus paid overtime
β Plus non-contractual bonus (subject to eligibility)
β Holidays: 34 days annual leave (inclusive of public holidays)
β Pension: Defined contributory scheme
β 3% employee / 6% employer contributions
β Option to increase contributions annually (up to 7% employee / 14% employer)
Key Responsibilities
β Lead kitchen shifts and supervise staff in preparing and serving food to Fellows, guests, students, and staff
β Ensure efficient kitchen operations, minimising costs and energy usage
β Maintain compliance with food safety and health & safety legislation
β Assist in menu planning and development of cyclic menus
β Submit food orders and manage stock rotation
β Promote the use of fresh produce and ensure dishes meet agreed recipes
β Monitor food presentation and service standards across all serveries
β Brief food service staff on menu content and conduct regular service checks
β Support training and development of kitchen brigade, including competition-level preparation
β Collaborate with colleagues across departments to plan and problem-solve
β Respond professionally to emergencies and uphold safety protocols
β Undertake additional duties as required to support the Head Chef and wider team
Person Specification
Qualifications:
β NVQ Level 2 & 3 in Professional Cookery
β Basic Food Hygiene Certificate
β HACCP and COSHH training
Skills & Experience:
β Minimum 3 years\β experience in a similar role
β Strong leadership, organisation, and communication skills
β Excellent customer service and interpersonal abilities
β Understanding of HACCP and food safety standards
β Experience in a college or institutional setting (desirable)
