Overall Purpose and scope of the job: To assist with the overall production of patisserie items, tarts and savouries. Always ensuring you follow recipes to Blackbird standards and make the products in the artisanal way using your hands to mould and shape. Responsible for producing quality pastries, cakes and savoury rolls, and work as part of a team in a kitchen for the hygienic preparation and service of a range of food items in a professional manner.
Key Objectives
- Checks production schedule to determine variety and quantity of goods to make.
- To produce full range of products to the highest standard and quality using the company recipe specifications.
- To provide the highest standard of product quality at all times.
- To maintain an awareness of the production plan and ensure that this is met at all times.
- To report to all shifts as required on the rota.
- To be an active team member and to help colleagues.
Key Responsibilities and Activities
General duties
- Cutting, mixing and preparing fruit and ingredients according to plan.
- Baking products ready for finishing.
- Assisting the Production Supervisor with any other tasks as required.
Product knowledge and food quality
- To observe Blackbird’s core values (Quality, Freshness, Service and Hygiene) and the 6 senses.
- To communicate effectively with the rest of the team to prevent items from running out by being proactive in stock replenishment.
- To produce the full range of products to the highest standard using the company’s recipe specifications and that all finished food products are of a high standard, in both quality and freshness.
- Check production schedule to determine the variety and quantity of goods to make.
- Measure and mix ingredients following recipes.
- Cut, peel, and prepare ingredients for cake and tart fillings.
- Mix icing and other toppings and decorate cakes, pastries, and other baked goods.
- Use a variety of kitchen tools, including electric mixers, pans, rolling pins, and cutting tools.
Standards
- Ensure all working areas are kept clean and tidy at all times, leaving the area organized accordingly at the end of each shift, clean as you go.
- Ensure correct uniform standards are worn at work and personal hygiene is maintained to the highest level.
- Work cleanly, safely and hygienically at all times.
- Ensure proper hygiene procedures are followed, with regular cleaning of equipment.
Maintain company Standards and follows H&S guidelines:
- Report all accidents to the manager on duty.
- Comply with legislation regarding the H&S of food hygiene.
- To report all faulty equipment and machinery to the Manager on duty.
- To record an inventory of all products and wastage at the end of the shift.
- Consistently maintains good housekeeping standards to ensure work areas are always sparkling clean and to Company standards.
- To ensure adequate and sufficient preparation levels for the whole day’s production.
- To maintain the highest level of personal hygiene.
- To ensure that all areas within the production kitchen are maintained to the agreed standards of cleanliness and hygiene and left accordingly at the end of your shift.
- To report all faulty equipment, machinery and service-ware to the Technical Manager.
- To report all accidents to the Manager and ensure that these are recorded in the accident book.

Skill and Technical Requirements
- Ideally previous experience in food production.
- Patisserie or cake production experience an advantage.
- Passionate approach to food.
- A good sense of taste, smell, and touch are important.
