Reports to: Head Baker

Responsible for: Mixing, dividing and shaping bread

Shifts: From 2.30pm - 2am

Purpose of role: To assist with the overall production of large quantities of bread making each of our products irresistible. Always ensuring you follow recipes to Blackbird standards and make the products in the traditional artisan way using your hands to mould and shape the bread dough. To scale, divide and shape bread the Blackbird way.

Key Objectives

  • To produce full range of products to the highest standard and quality using the company recipe specifications
  • To always provide the highest standard of product quality
  • To maintain an awareness of the production plan and ensure that this is always met
  • To report to all shifts as required on the rota
  • To be an active team member and to help colleagues

Responsibilities

Mixing

  • Ensure you use only required levels and quantities of ingredients, flour, yeast, salt and water
  • Be aware of stock rotation and dates when preparing ingredients ready for mixing
  • Mix dough using correct mixer equipment
  • Operate mixer correctly ensuring safety rules are followed
  • During fermentation process turn dough 3-4 times each hour
  • Check dough on an hourly basis
  • Ensure mixers are cleaned after use
  • Unload mix into dough containers ensuring manual handling guidelines are followed

Weighing and Measuring

  • Ensure daily production plan is followed
  • Scale weight of dough into correct amounts according to production levels for each required bread

Dividing

  • Put each batch of dough onto divider ensuring correct amount of dough is used
  • Operate divider adhering to safety rules

Shaping

  • Once divided pre-shape dough into ‘ball’ shape
  • Manually shape (or use the relevant appropriate machine) the bread into correct final product eg; loaves

Standards

  • Ensure all working areas are kept clean and tidy at all times, leaving area organised accordingly at the end of each shift, clean as you go
  • Ensure correct uniform standards are worn at work and personal hygiene is maintained to the highest level

Health & Safety

  • Work cleanly, safely and hygienically at all times
  • Ensure proper hygiene procedures are followed, with regular cleaning of equipment
  • Report all accidents to the manager on duty
  • Comply with legislation regarding the H&S of food hygiene
  • To report all faulty equipment, machinery to the Manager on duty

Product knowledge and food quality

  • To observe Blackbird’s core values (Quality, Freshness Service and Hygiene) and the 6 senses
  • To communicate effectively with the rest of the team to prevent items from running out by being proactive in stock replenishment

Teamwork - Passionate about People

  • Take responsibility for supporting team members in the development of skills and product knowledge, support training of new colleagues
  • Take responsibility for own timekeeping, be at work on time on all occasions as stipulated on the rota
  • Helpful without being asked, cooperative and friendly and willingness to try new ideas
  • Play an active role in team meetings by communicating, listening to others’ ideas and opinions and showing respect
  • Build good working relations with all team and other areas of the business
