A market-leading, high-growth QSR business is seeking an exceptional Operations Manager to oversee a high-performing multi-site region across Edinburgh and the wider Scotland territory.

This is a senior field leadership role within a rapidly expanding, investor-backed QSR group operating at scale across the UK & Ireland.

The business is in a significant growth phase, with aggressive expansion across city centres, retail parks, drive-thrus and travel hubs.

The role is best suited to a commercially driven, high-energy multi-site operator with experience managing 8+ high-volume sites, who thrives in fast-paced environments where execution, standards and people leadership directly impact performance.

The Role

  • Full operational ownership of 8+ QSR sites across Scotland (Edinburgh core region)
  • Accountability for P&L delivery, labour %, sales growth and EBITDA contribution
  • Leadership of high-performing General Managers and field teams
  • Responsibility for new site openings and regional rollout support (2–4 per year)
  • Close partnership with central operations, HR, training and commercial teams
  • Highly field-based role — majority of time spent in restaurants

Key Responsibilities

  • Commercial & Performance
  • Own weekly and monthly sales, labour and profit performance across all sites
  • Drive KPIs including ATV, delivery mix, covers, throughput and labour efficiency
  • Deliver EBITDA improvement across both mature and new sites
  • Identify and act on underperformance quickly and decisively
  • People & Leadership
  • Lead, coach and develop a team of high-performing GMs
  • Build succession pipelines and internal promotion pathways
  • Drive performance management and accountability culture
  • Create a strong, energised and high-performance field culture
  • Operations & Standards
  • Ensure consistent delivery of brand standards across all locations
  • Maintain compliance across food safety, H&S, audits and operational checks
  • Drive guest experience, speed of service and product quality metrics
  • Growth & Openings
  • Support end-to-end delivery of new openings in region
  • Work closely with pre-opening and central support teams
  • Ensure sites hit trading standards from day one

  • Experienced Area / Regional / Operations Manager from QSR or Fast Casual
  • Proven experience managing 8+ high-volume sites
  • Strong exposure to branded, high-footfall hospitality environments
