Tucked away in the heart of Canonbury, Bistro Sable is Noble Inns’ latest creation, a neighbourhood bistro inspired by the spirit of classic Parisian dining. We serve timeless dishes with the Noble Inns ethos of sourcing ingredients with the utmost provenance, from day-boat fish to game from the Royal Estates, all cooked over coal. As we continue to grow, we are looking for a passionate and talented Sous Chef to join our kitchen team and play a key role in bringing our vision to life.

The Role

As a Senior Sous Chef at Bistro Sablé, you will play a vital role in the day-to-day operations of the kitchen, ensuring the highest standards of food preparation and presentation. Reporting to the Head Chef, you will assist in managing the kitchen team, overseeing food safety and hygiene, and ensuring the smooth operation of the kitchen during service. This is a fantastic opportunity for someone with strong culinary skills and leadership potential.

Key Responsibilities

  • Assist in managing the kitchen team to ensure high standards of food quality and consistency.
  • Support the Head Chef with menu planning, development, and execution of daily specials.
  • Oversee food preparation and cooking, ensuring dishes are produced to the highest quality.
  • Maintain a clean and safe working environment, adhering to health and safety standards.
  • Assist with stock control and ordering of ingredients.
  • Train and mentor junior kitchen staff, fostering a positive and collaborative working environment.
  • Assist in managing kitchen budgets and minimising waste.

Essential Skills and Experience

  • Previous experience as a Senior Sous Chef or Sous Chef.
  • Strong knowledge of kitchen operations, food preparation, and cooking techniques.
  • Ability to lead and motivate a team under pressure.
  • Excellent organisational and time-management skills.
  • A passion for fresh, quality ingredients and innovative cooking.
