It means taking care of our guests, of course, but it also means taking care of you and the people you work with. As a Groups & Tours Sales Manager, you are accountable for the commercial growth of Bill’s Groups and Tours business. You own revenue performance, sales strategy and partner development for this channel, ensuring growth is delivered sustainably, profitably and in line with the wider business strategy. This role exists to turn opportunity into long-term value.

You develop sale strategies, pricing frameworks and partnerships that drive volume while protecting margin, and you create confidence for both guests and partners through clear commercial ownership. Working closely with Finance, Operations, Reservations and Marketing Teams to ensure that what we promise, we can deliver seamlessly, and that learning from delivery feeds back into pricing, menus and future sales strategy.

As a part of the reservations team, this role will occasionally require weekend working on a rolling basis to ensure essential communications and the Chatbot are looked after during peak restaurant hours.

  • Revenue Ownership & Sales Strategy: Own group and tour revenue performance, contributing to targets, forecasting and seasonal campaigns while balancing growth, profitability and operational delivery.
  • Pricing Strategy & Margin Management: Work with Finance to maintain effective pricing strategies that support cover growth while protecting margins.
  • Trade & Partner Relationship Management: Build and manage relationships with tour operators, agents and group partners, leading contracts, renewals and performance reviews.
  • Handover & Internal Coordination: Ensure smooth handover from sales to delivery by clearly documenting and sharing booking requirements with operational teams.
  • Sales Performance, Reporting & Insight: Monitor booking performance and provide reporting and insight to support commercial decisions and identify growth opportunities.
  • Group & Tour Menu Development: Collaborate with Food and Marketing teams to develop commercially viable group menus and ensure they are ready for sales and system setup.
  • Business Growth & New Business Development: Develop new partnerships and sales opportunities through outreach, industry engagement and tools such as Apollo.io.
  • Asset Development & Sales Enablement: Work with Marketing to create and maintain sales materials that support group and tour growth.
