We are seeking a talented Head Pastry Chef to lead the Pastry team at The Cadogan, A Belmond Hotel. This key position offers a unique opportunity to shape and elevate the pastry offering across the hotel. The ideal candidate will be passionate about creating exceptional pastries and desserts, leading a high-performing team, and delivering outstanding guest experiences through creativity, quality and innovation. Reporting to the Executive Chef, the Head Pastry Chef will oversee all pastry operations, ensuring the highest standards of quality, consistency, presentation and efficiency across the department.

The hotel’s 54 rooms and suites artfully blend a rich historical legacy with contemporary luxury, creating a space imbued with character, history, and a profound sense of belonging, all while echoing its tradition of hosting both historical and contemporary esteemed guests. The hotel further distinguishes itself through its exceptional food and beverage offering, centred around Willett's, its welcoming neighbourhood British bistro and bar, where seasonal British produce, daily specials and classic dishes are served in a warm and inviting all-day dining setting.
Main Responsibilities:
- Lead and oversee all pastry operations, including desserts, pastries and baked goods
- Create innovative seasonal menus and new dessert concepts
- Develop and standardise recipes to ensure consistency and quality
- Recruit, train and manage the pastry team
- Prepare team rotas and manage daily staffing levels
- Maintain exceptional standards of presentation, taste and quality
- Manage stock levels, ordering and inventory control
- Monitor food costs and minimise waste in line with budgets
- Ensure pastry equipment is maintained and fully operational
- Maintain high standards of hygiene, cleanliness and food safety
- Work closely with kitchen and front-of-house teams to deliver seamless service
- Stay up to date with pastry trends, techniques and industry developments
